Pink in the Middle Roast

Ingredients:

Boneless Roast

Dry Vermouth

Olive Oil

Salt and Pepper

1 1/2 tsp Sugar

1 tsp Kitchen Bouquet

 

Directions

 

Rub roast with vermouth and olive oil. Season with salt, pepper, sugar and Kitchen Bouquet.

In a shallow baking pan, place roast in a pre-heated 500 degree oven.

Total cooking time will be 2 hours regardless of the size of the roast.

Cook roast at 500 degrees for 5 minutes per pound. Turn off oven! DO NOT OPEN THE DOOR even once.

Allow roast to continue to cook for remainder of 2 hours.

Example: An 8 lb. roast - cook 5 minutes per pound at 500 degrees - 40 minutes - then turn the oven off and remove the roast 1 hour and 20 minutes later.

If roast is very lean, wrap bacon around it before cooking.
